Lahmacun, lahmajoun or lahm bi-`ajĩn is a personal, very thin crust, minced meat pizza. It is a common dish in Middle East, Anatolia and Caucasus regions. In countries like Turkey, Armenia, Lebanon, Jordan, Palestine, or Iran, there are bakeries that cater only lahmacun. In Western countries, some Arabic, Kurdish, Armenian, or Turkish restaurants serves lahmacun as a side dish.

Lahmacun

As the Arabic name suggest (lahm bi-`ajĩn - meat with dough), it is not a vegetarian dish, but since I try keep away from meat in my daily life, I replaced the minced meat with ground meat alternative. The taste was same.

For the dough I used the same recipe as Turkish pide, from Home Baking.

In our household, we like ashura a lot and try to cook it frequently. Couple of days ago I realized that I haven't cooked it for a while.

Water Pastry (or Turkish Lasagna)

This is one of the recipes that requires some expertise in the kitchen. Even though, there are some alternatives, like using lasagna sheets, which make life a lot easier, it is more delicious if you prepare your own dough.

Water Pastry

This time, my mother helped me to prepare the phyllo.

Yogurt

The medical term for yogurt is Bacillus Bulgaris. It is very popular in Balkans and Anatolia for centuries, and became popular in Europe and America in the last couple of decades.

Yogurt

Majority of people eat it, because they have been told it is good for them. Not many people know that daily use of yogurt ensures regular habits, the blood is purified and skin diseases cleared in a very short time. For feverish conditions it can be given safely when no other food is allowed; it induces sleep and calms the nerves and thus has a remarkable affect on hysterical subjects.

Kashkek (Wheat Puree)

Kashkek (keşkek) is another traditional Turkish dish that is usually served in big gatherings. It is usually served with meat, like gravy. It's texture is a little thicker than the gravy.

Keskek (Wheat Puree)

The preparation is tedious and takes some time. At least I was thinking that way, and did not even try earlier. Last month, when I was talking to my mom, she gave me this recipe. It is really easy. You cook the wheat slowly, add cold water when necessary, and do your other tasks.

Semolina Halva

| | Comments (2)

Halva is the name of two distinctly different types of dessert. One of them is candy like dessert made from tahini, and can be stored for a very long time. It is very popular in the Middle East, the Balkans, and other areas around the Mediterranean.

Semolina Halva

The other one is made from semolina (or flour), and should be consumed relatively shorter time. Semolina halva is a very common dessert in Turkey. (And I recenlty learned it is also a very common dessert in India).
