Breadsticks with Tahini

The dough in this recipe is the first dough recipe I have ever baked. I don't know where I get the recipe from but I used it as pizza dough for a very long time.

When I prepared the dough, I was planning to make pizza, however, as usual I failed, to check the other ingredients and saw that I don't have anything but cream cheese and tahini. Hence I decided to make tahini ship biscuit.

Breadsticks with Tahini

I tried to make them according to my mom's recipe. I made the slices thinner than usual and here comes the breadsticks.

Ingredients:

1 cup of flour
1/4 cups of cooking oil
1 egg
3 tbsp yogurt
1/2 tbsp dry yeast
1/2 cups of warm water
1 tbsp salt
1 tsp sugar

Filling:
1/2 cups of tahini
1/4 cups of cooking oil
1/4 cups of sugar (optional)
1/4 cups of shredded walnut

Alternative: cream cheese, feta cheese or poppy seed

Topping:
1 egg (well beaten)
sesame, poppy seed or onion seed

1. Dissolve the yeast and sugar in 4 tbsp warm water. Wait for 5 minutes or until the mixture start rising.

2. Sift the flour into a deep cookware. Add egg, oil, yeast, salt and yogurt in the middle of the sifted flour.

3. Mix all of them and add some more water.

4. Make a soft but non-sticky dough. If necessary add water or flour just a little bit.

5. Cover the dough with a moist cloth and let it rise until its size doubled.

6. Mix the fillings in another cup.

7. Make walnut size balls from the dough.

8. Make a thick phyllo (approximately 1/4 of an inch) from one of the doughs. Spread the filling on top of the dough and put aside.

9. Repeat the step 8 two more times, and place the 4th dough on top of all other three without spreading any filling.

10. Put the doughs aside for resting, while repeating step 8 and 9 until all the doughs finish.

11. Take the first 4 dough set and make a phyllo dough again, this time with a thickness of approximately 1/2 inch.

12. Cut the dough set horizontally with a thickness of approximately 1 inch. Twist the sticks from two ends, and place on a baking sheet. Make sure that there is a 1 inch distance between the sticks.

13. Keep the baking sheet at room temperature until the pieces double their sizes.

14. Brush the egg and sprinkle some topping.

15. Preheat the oven to 200C/400F.

14. Cook the breadsticks for 30 minutes or until the surfaces become golden brown.
