Last month Jodie asked the name and the recipe of the bread that is approx 1 inch high & has sprinkling of sesame seeds on top. The bread is called "Ramazan pidesi" which means "Turkish pita for Ramadan"

Turkish Pita for Ramadan

I found the recipe but it was in Turkish. I did not want to translate and send her the translation without trying it by myself first.

This bread is very popular in Turkey especially during the Ramadan month.

Ingredients:
One 1/4 -ounce (7.5g) packet of active dry yeast
2 lb/1 kg flour
1/4 cups of warm water
7 tbsp (~50g) of butter
1.5 tbsp yogurt
1.5 cups of water
salt
1tsp sugar
1/4 cups of cooking oil
1 tbsp caraway seed/sesame seeds/poppy seed

1. Dissolve the yeast in warm water. Put the mixture aside for 5-10 minutes, until it rises approximately 1cm (approximately half inch).

2. Melt the butter.

3. Mix flour, yeast, melted butter, cooking oil, salt and sugar.

4. Add remaining water slowly and make a dough.

5. Divide the dough into two pieces, and make balls.

6. Cut a deep cross on the ball surface. Cover with a plastic film, and put it aside for half an hour.

7. Transfer the dough to a slightly floured surface, and make it flat using a rolling pin. The thickness should be about half centimeter (approximately 1/4 inch).

8. Using the grip of a spoon draw a checkered pattern.

9. Beat the yogurt and apply it to the surface of the pita.

10. Sprinkle the caraway seed on top of the pita, and put it to a baking sheet/ stone. Cover with a plastic film, and put it aside for an hour.

11. Preheat the oven to 160C/320F.

12. Cook the pita until the surface becomes golden.

13. Cool it on a rack.

Hint: If you put some water in the oven during the cooking, the breads will be softer.

One question: How much salt?

Depends on your taste. I usually add about 1/2 tablespoon salt to my homemade breads.
