Bread for a Turkish person, is what rice is for a Chineese, and beef is for a Texan. I saw people who eat bread with everthing, even with pasta or rice. As a Turkish, I also like the bread. especially when it is just baked, and still warm.

Wheat French Baguettes

I found this recipe from a bread machine cookbook, and adapted it a little.

Ingredients:

1 3/8 cups lukewarm water
2 1/2 cups white flour
1 cup wheat
1 1/2 tsp salt
1 1/2 tsp active dry yeast

1. Dissolve the yeast in the water.

2. Add salt, flour and wheat and make a dough.

3. Transfer the dough onto a lightly floured surface and slice to four pieces.

4. Shape each piece in ball then roll into rectangles. With the long sides facing, fold the top third of each rectangle down and the bottom third up and press together.

5. Keep it under damp cloth at room temperature for half an hour and repeat the rolling/folding and resting steps two more times.

6. Gently roll and stretch each piece of dough turn into a stick.

Kepekli Ekmek7. Place between the folds of a pleated dish towel for support and cover it with a damp cloth.

8. Keep it at the room temperature for 30-40 minutes to rise.

9. Slash the tops diagonally.

10. Cook the breads inside a preheated oven, 450F/230C. Put some water in a cup inside of the oven so the breads will not get dry.
