Fried Turkish Patty

When I have a time in the morning I like to cook this patty for breakfast. It is a little hard to prepare the patties with using a frozen phyllo dough. They tend to dry quickly, or can melt when you spread yogurt mixture.

Fried Turkish Patty

These patties were one of my favorites when I was a child, and they still are.

Ingredients:
1 package phyllo dough (9"x14", #6 to #9 if it is specified. Approx. 20 sheet per box)
1 egg
3 tbs sour cream or yogurt
2 tbs vegetable oil
4 medium size potatoes
1/2 cup chopped parsley
3.5 oz (100 g) feta cheese
Spices
Frying oil

1. Boil, skin, and crush the potatoes.

2. Crush feta cheese and mix with potatoes. Add any spice you like.

3. Beat egg, and mix with yogurt and oil at another cup.

4. Lay down the first dough over a plastic film layer.

5. Spread some yogurt mixture and cover with second layer of phyllo.

6. Cut the dough 5 to 7 pieces vertically.

8. Place ~1 tbs potato mixture at one corner of one of the pieces and fold each piece like folding a flag. You need to be fast at this step oherwise the phyllo can melt. Plastic film will help at this point. You can fold the remaining dough using plastic film.

9. Place the prepared patties in hot oil and fry each side 1-2 minutes, until each side become golden.
