Fried Zucchini with Feta Cheese
Original recipe includes eggplant, and it turns out that zucchini is better since it holds less oil in its body.

It makes two servings and takes 15 minutes to prepare. You can try adding a spoonful of yogurt on top of it.
Ingredients:
1 medium size zucchini
4 oz feta cheese
Spices (oregano, red pepper, black pepper, etc)-optional
Oil for frying
1. Slice the zucchini horizontally.
2. Mix feta cheese, and spices in a bowl.
3. Put feta cheese mixture between two zucchini slices lik making a sandwich.
4. Pan fry them. Cheese will melt and hold the slices together but if you think slices will separate, you can stick a small toothpick in the center of sanwich.(Be careful about these toothpicks while you are eating.)
5. Remove the slices from the pan and put them on a paper towel covered serving dish. This will reduce the oil content.
I like to reduce the side effect fry dishes with eating them with yogurt.
