Dried Fruit Oatmeal Cookies

| | Comments (0)

I really like oatmeal cookies, and my favorites are raisin-cinnamon oatmeal cookies. I found this recipe from a margarine package. It makes about 1.5 dozen large cookies, or 3 dozen small cookies.

Oatmeal Cookies

As usual, I add all of the dried fruits I found at the home.

Ingredients:
1 cup butter (2 sticks)
1 cup sugar
2 eggs
1 tsp vanilla extract
1.5 cups flour
1 tsp baking powder
1/2 tsp salt (If you are using salted butter, you can skip salt)
3 cups oatmeal
1.5 cups mixture of dried cranberry, chopped dates and chocolate chips

1. In a large bowl, beat butter until light.

2. Add sugar, beat until fluffy.

3. Add eggs and vanilla and beat well.

4. Add flour, salt, and baking powder, mix well.

5. Add oatmeal and cranberry, dates and chocolate mixture, and stir untill throughly combined.

6. Dropped by rounded tablespoonfuls onto cookie sheet.

7. Bake them at preheated oven (350F-190C) for 15-20 minutes, until cookies are just set. (Do not overbake)

8. Put them onto a rack to cool down.
