Spaghetti with Grilled Vegetable

This is another easy and a healthy dish. Actually if you are vegetarian, this is one of the few options you will have during lunch meeting. You can substitute the ingredients with any vegetable you like. This propotions make 3 servings.

Spaghetti with Grilled Vegetable

I ate spaghetti with grilled vegetables first at a seminar I attended, and like it so much. Grilled vegetables spice up the spaghetti, and they transform a regular spaghetti meal to a really delicous one.

Ingredients:
8 oz spaghetti
3-4 cups water
3 tbsp olive oil
1 tsp salt
Cherry tomatoes, zucchini, mushroom (or any vegetable you like)

1. Put water, salt and 1 tbsp oil to a sauce pan, and bring water to boil.

2. Add spaghetti to the pan, boil 8-10 minutes.

3. While the pasta is boiling, slice the mushroom, zucchini, and other vegetables as if you are going to fry them.

4. Grill the vegetables in a skillet separately. (Without putting oil, heat the dish, than add the vegetables, stirr and/or rotate each slice untill they are softened.)

5. Drain the water of the pasta and wash the pasta with cold water.

6. Put 2 tbsp oil to a sauce pan, and heat it. Add the pasta to hot oil and pan fry 1-2 minutes. (You can replace olive oil with butter. Olive oil will be lighter but butter adds a nice flavour)

7. Put the spaghetti to a serving dish.

8. Add the grilled vegetables on spaghetti.

Serve it with shredded cheese. Also try it with plain yogurt.
